Southwest Ranch Shrimp Tacos
Ingredients
- 1 ½ pounds jumbo shrimp, peeled and deveined
- 6 – 8 flour or corn tortillas
- 3 cups thinly shredded cabbage
- 1 avocado
- 4 Tbsp. good mayonnaise
- 4 Tbsp. vegetable oil
- I jalapeno, finely diced
- thinly sliced red onion, divided (1/2 finely dice)
- ¼ c. coarsely chopped cilantro
- 2 tsp. sugar
- Shirlie Jayne’s Southwest Ranch salad dressing
- 1 ½ tsp. Shirlie Jayne’s Savory Everyday Seasoning
- 1 ½ tsp. taco seasoning
- 2 limes, sliced
How to Prepare
- In a bowl add cabbage, 1 Tbsp. oil, diced jalapeno and red onion, sugar, and mayonnaise and toss. Set aside.
- Heat 2 tsp. oil in skillet.
- Cook tortillas until lightly crispy and set aside.
- Add 1 Tbsp. oil and heat.
- Place tortilla on plate.
- Add shrimp sprinkled with Shirlie Jayne’s Savory Everyday Seasoning and taco seasoning.
- Cook just a few minutes turning half way through until pink and cooked through.
- Drizzle Shirlie Jayne’s Southwest Ranch dressing on cooked tortilla.
- Add a dollop of cabbage slaw.
- Top with shrimp, red pepper, sliced red onion, cilantro and a squeeze of lime.
