Shrimp Broccoli Quinoa Bowl
A healthy combination of shrimp, broccoli, and quinoa with a hint of cashew and lemon. Perfect as a main dish or side dish.
Ingredients
- 1 cup quinoa
- 1 lb Shrimp
- 1 - 2 Tbls. vegetable oil
- 4 cups broccoli. chopped or flowers
- Salt, pepper, and granulated garlic to taste
- 3 scallions, thinly sliced in small pieces
- 1/2 cup raw cashews
- Optional: 1 cup black beans
- Shirlie Jayne's Lemony Greek Dressing
How to Prepare
- Prepare the quinoa according to directions. Set aside, covered.
- Put shrimp in a large sturdy zip lock bag.
- Cover the shrimp with Shirlie Jayne's Lemony Greek Dressing. Seal the bag and place in refrigerator for 1 hour.
- Steam broccoli until tender. Set aside, covered.
- Optional: In a small saute pan or microwave, heat black beans. Set aside covered.
- Remove shrimp and discard marinade. Season with salt, pepper, and granulated garlic mixture.
- Heat oil in a saute pan. Cook shrimp on medium heat 2-3 minutes on each side and remove from heat. Do not overcook.
- Mix quinoa, broccoli, and black beans together - reheat if necessary.
- Take 4 bowls and spoon quinoa mixture on the bottom equally.
- Attractively top with shrimp, scallions, and cashews.
- Drizzle with a little more dressing and serve.
