Citrus Turkey Breast
A bright combination of citrus flavors and savory herbs to create a unique flair for your roasted turkey dinner.
Ingredients
- Turkey Breast
- 2 tsp. salt
- 1 tsp. pepper
- 1 tsp. rosemary
- 1 tsp. granulated garlic
- 1 tsp. granulated onion
- 2 tsp. paprika
- 2 Tlbs. butter
- Shirlie Jayne’s Balsamic Tangerine Dressing
Garnish
- 4 Tangerines
- 3/4 cup cashews
- 3/4 cup pomegranate seeds
- 6 - 10 prunes (optional)
- Bib lettuce and rosemary garnish
Sauce
- Shirlie Jayne's Balsamic Tangerine Dressing
- Saved pan juices (from cooked turkey breast)
- Optional: concentrated orange juice (for a more citrus flavored sauce)
How to Prepare
- Place the turkey breast in a large sturdy zip lock bag.
- Add desired amount of Shirlie Jayne’s Balsamic Tangerine Dressing.
- Marinate in refrigerator for 2 to 3 hours
- Pre-heat oven to 325 and place the turkey breast side up in roasting pan.
- Mix salt, pepper, rosemary, garlic, onion, and paprika in a small bowl. Sprinkle on turkey breast to season
- Slice two pats of butter into small squares and arrange on turkey breast
- Roast time according to the weight of the turkey breast or until a meat thermometer reads 160 degrees F when inserted into the thickest part of the roast.
- Transfer the turkey on to a cutting board and tent loosely with foil for 20 minutes.
- In sauce pan combine 1/2 cup Shirlie Jayne's Balsamic Tangerine Dressing and extra pan juices. (Concentrated orange juice can be added if desired for a more citrus flavor). Cook and reduce into a desirable sauce consistency.
- Slice your turkey. Lay slices on your serving dish on a bed of bib lettuce. Garnish with tangerine slices, cashews, pomegranate seeds, and prunes.
- Gently drizzle your sauce over the roast. Place remainder of sauce on table for serving if desired.
