Citrus Turkey Breast

A bright combination of citrus flavors and savory herbs to create a unique flair for your roasted turkey dinner.

Ingredients

  • Turkey Breast
  • 2 tsp. salt
  • 1 tsp. pepper
  • 1 tsp. rosemary
  • 1 tsp. granulated garlic
  • 1 tsp. granulated onion
  • 2 tsp. paprika
  • 2 Tlbs. butter
  • Shirlie Jayne’s Balsamic Tangerine Dressing

Garnish

  • 4 Tangerines
  • 3/4 cup cashews
  • 3/4 cup pomegranate seeds
  • 6 - 10 prunes (optional)
  • Bib lettuce and rosemary garnish

Sauce

  • Shirlie Jayne's Balsamic Tangerine Dressing
  • Saved pan juices (from cooked turkey breast)
  • Optional: concentrated orange juice (for a more citrus flavored sauce)

How to Prepare

  1. Place the turkey breast in a large sturdy zip lock bag.
  2. Add desired amount of Shirlie Jayne’s Balsamic Tangerine Dressing. 
  3. Marinate in refrigerator for 2 to 3 hours
  4. Pre-heat oven to 325 and place the turkey breast side up in roasting pan. 
  5. Mix salt, pepper, rosemary, garlic, onion, and paprika in a small bowl.  Sprinkle on turkey breast to season 
  6. Slice two pats of butter into small squares and arrange on turkey breast
  7. Roast time according to the weight of the turkey breast or until a meat thermometer reads 160 degrees F when inserted into the thickest part of the roast.
  8. Transfer the turkey on to a cutting board and tent loosely with foil for 20 minutes.
  9. In sauce pan combine 1/2 cup Shirlie Jayne's Balsamic Tangerine Dressing and extra pan juices.  (Concentrated orange juice can be added if desired for a more citrus flavor). Cook and reduce into a desirable sauce consistency.
  10. Slice your turkey.  Lay slices on your serving dish on a bed of bib lettuce. Garnish with tangerine slices, cashews, pomegranate seeds, and prunes.
  11. Gently drizzle your sauce over the roast.  Place remainder of sauce on table for serving if desired.
