Balsamic Chicken Salad
This is a colorful, tasty main dish sauteed chicken salad complete with mushrooms, cherry tomatoes, and avocados. When drizzled with Shirlie Jayne's Balsamic Tangerine dressing, you have a unique twist!
Ingredients
- 6 - 4 oz chicken breast halves, boneless and sliced
- 2 Tbls. olive oil or vegetable oil divided
- 1/2 tsp. garlic , minced
- 1 1/2 cups cherry tomatoes (halved if desired)
- 1 1/2 cups mushrooms, sliced
- 2 - 3 avocados, sliced
- 4 - 8 basil leaves, fresh
- 6 cups of favorite mixed greens
- Shirlie Jayne's Balsamic Tangerine Dressing
How to Prepare
- In a large skillet, saute the chicken in 2 tbls. of olive or vegetable oil until no longer pink
- Add garlic and 1/2 cup Balsamic Tangerine Dressing and saute for one minute longer. Set aside.
- Arrange basil leaves decoratively around the edge of 6 salad plates and then place a cup of mixed greens in the center.
- Artfully arrange the tomatoes, mushrooms, chicken, and avocados on top of the greens.
- Drizzle Shirlie Jayne's Balsamic Tangerine Dressing in a crisscross manner over all.
- Serve with extra dressing if desired.
