Asian Peanut Salad with Grilled Chicken
Ingredients
- 1 ¼ pounds boneless, skinless chicken breasts
- ¾ pounds soba or linguine noodles
- 1 cup sliced Persian cucumber
- ¾ cup matchstick sliced carrot
- ¾ cup watermelon radishes sliced
- ½ cup chopped cilantro
- Shirlie Jayne’s Asian Peanut salad dressing
- ½ cup chopped dry roasted peanuts
- 2 limes cut in wedges
- 2 Tbsp. vegetable oil
- 2 tsp. Shirlie Jayne’s Savory Everyday Seasoning
How to Prepare
- Boil water and follow instructions on package for noodles.
- Heat oil in skillet.
- Season Chicken with Shirlie Jayne’s Savory Everyday Seasoning.
- Cook 3 minutes on each side until cooked through. Can also be grilled.
- Assemble by laying a layer of cooked noodles on plate.
- Top with sliced chicken, Persian cucumber, watermelon radish, cilantro, and peanuts.
- Top with Shirlie Jayne’s Asian Peanut salad dressing.
- Serve with lime wedges.
