Asian Peanut Noodles with Vegetables
Ingredients
- 1 pound soba noodles (can substitute linguine or pad Thai rice noodles).
- 1 cup broccoli
- 1 small red onion sliced
- 3/4 red pepper sliced
- ¾ cup sliced mushrooms
- ½ cup sliced water chestnuts
- ½ cup chopped dry roasted peanuts
- 1/4 cup thinly sliced green onion
- 3 Tbsp. vegetable oil
How to Prepare
- Cook noodles per instructions on package. Drain
- While cooking noodles, heat oil in a wok or skillet.
- Sauté vegetables until desired darkness.
- Put noodles in serving dish
- Add cooked vegetables to the top of the noodles.
- Generously top with Shirlie Jayne’s Asian Peanut salad dressing and toss.
- Garnish with green onion and chopped peanuts.
